Day 103 – Epicure’s Italian Style Chicken

This recipe is similar to Chicken Cacciatore, using tomatos and Epicure’s Sun Dried Tomato for flavoring. Boneless chicken thighs would work well, or a cut up whole chicken. I would like to add mushrooms to this recipe as well in addition to the bell peppers. I used red and orange instead of green. Serve with rice or pasta.

Day 92 – Easy Breaded Chicken

If you made breaded chicken daily, and you tried a different savoury dip mix, seasoning, herb or salsa mix that Epicure Selections offers each time, you would have a different flavour every day for over three months!

Today, I made breaded chicken with Epicure’s Herb and Garlic, and Lemon Dilly Dip Mixes. Using your own ingredients for the breading ensures you are not eating a bunch of weird fats and who knows what else!! Crushed Premium Plus crackers make a great breading, plain old bread crumbs are fine too. I think bread crumbs taste better if they are toasted or the bread is dried out and lightly toasted in the oven before you make the crumbs.

I cut up a chicken, removed the skin and dipped each piece first in flour, then egg with a bit of water added, then the breading mixture of the spices, bread crumbs and salt and pepper. Bake with a few tiny pats of butter on the chicken pieces at 350F for 40 minutes on one side, then turn and bake for another 20 minutes. Use your judgement and a meat thermometer to determine your own cooking times, as it will vary depending on the size of the pieces.

Day 85 – Chicken Noodle Soup

A classic, very easy to make with Epicure’s Chicken Bouillon and your choice of noodles. Not much more to say than that. If you have some leftover chicken, that’s great to add as well.

This bouillon is very low in sodium and has no added MSG.

Day 4 — The Turkey Rub is great on chicken as well!

Washing fresh produce picked from our garden gave me cravings for chicken dinner, great opportunity to try out the new fall Turkey Rub. It’s great on chicken! Chicken in a roaster with some onion and carrots, then sprinkle on the Turkey Rub. Bake at 375F until done. I never know exactly how long this takes, so I use a meat thermometer to accurately check when the meat is done.
